Peach and Blueberry Cobbler
We have the sweetest couple who sells peaches at the Farmers Market each week, The Harris Family, and I get so excited to see them each week. We also have the best blueberry farm here in town, and we went blueberry picking this past weekend. The blueberries are AMAZING. So, I knew exactly what I was going to make this week for the 4th of July get together with Bryson's family. I hope you enjoy this recipe as much as we do! I've been making it for several years, and it's definitely a crowd pleaser! Enjoy!
Peach and Blueberry Cobbler
Ingredients:
- 2 pounds of peaches
- 3 cups of blueberries
- 1 tablespoon cornstarch
- 1/2 cup sugar (or less depending on how sweet your fruit is)
- Zest of 1 lime
- Pinch of kosher salt
- 2 cups of flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup of sugar
- 1 stick of unsalted butter, cold
- 1/2 teaspoon vanilla
- 1 cup of buttermilk
Instructions:
- Preheat oven to 375 degrees. Slice your peaches. Place peaches in a bowl with blueberries, cornstarch, sugar, lime zest, and salt. Toss to combine and set aside.
- In a separate bowl, whisk together flour, baking powder, salt, and sugar. Cut the butter into the flour in small pieces and stir with a fork to combine. Whisk buttermilk and vanilla, then pour into dry ingredients. Stir with fork until it comes together.
- Transfer fruit to a 12x8 baking dish or 10 inch cast iron skillet. Bread off pieces of dough over fruit. Brush dough with buttermilk and sprinkle with sugar.
- Bake for 50-55 minutes. Let cool before serving. Serve with ice cream or whipped cream!
